Skinny Sweet Potato Tacos
Delicious vegetarian taco with sweet potato and bean stew. This taco is packed with nutrients and will keep you satisfied!

Here’s how to make it:
Peel the sweet potatoes and cut them into approximately 2 cm cubes. Rub the cubes with a little oil and then coat them with Broken Taco Tuesday Spice Mix. Spread the sweet potatoes on a baking sheet lined with parchment paper and bake them at 390°F for 20-25 minutes until they’re tender.
Heat Broken Taco Refried Beans under a lid in a small pot. Halve the cherry tomatoes.
Warm the small tortillas in the microwave or wrap them in aluminum foil and heat them at 300°F for 3-5 minutes in the oven.
Spread a bit of refried beans on each tortilla. Layer sweet potatoes, cherry tomatoes, and Broken Taco Herbed Jalapenos. Top with Broken Taco Salsa Verde.
